Recuerdo como en mi casa, desde que tengo uso de razón, al final del verano cuando las uvas llegaban a la plenitud de su madurez, mi abuelo nos llevaba a la bodega de la casa a molerlas y sacar el mosto, que luego sería fermentado y guardado celosamente.
La cercanía con estos conocimientos nos lleva a descubrir como, en forma rudimentaria, nuestra cultura vinífera se ha desarrollado en el tiempo.
Siguiendo la tradición de los antiguos asentamientos religiosos en el valle de Elqui, donde una congregación, hacia 1670, habría comerciado vino dulce conocido entonces como “mercedario”, aprovechando las muy particulares características de la uva que crecía en la región: dulce, jugosa, de mucha pureza y buen tamaño.
